01 Kinmedai 金目鯛 - Gold Eye Snapper
- nothing memorable
02 Kampachi かんぱち - Amberjack
03 Bluefin Tuna 赤身 - the back portion of a tuna (red meat lean version)
- From this dish I noticed that the fish temperature is noticeably colder than room temperature.
04 Shima-aji 縞鯵 - Striped Jack
- This tastes more rubbery than it should be – due to the cold fish temperature.
05 Ikura イクラ - Salmon Roe
- Did you know - Ikura is actually Russian/Ukrainian
06 Hirame 平目 with Shiso (しそ, 紫蘇) - flounder topped with beefsteak leaves
- Herbs hater gonna hate, but the Shiso transforms this dish providing that bitter sweetness
- Strikes me as the most memorable dish so far because of it.
07 Bluefin Tuna 中トロ - the belly portion of a tuna
- Again, the fish temperature is noticeably cold.
08 King Salmon
- The scallion addition is great, without it I certainly won’t remember the dish as good.
09 Amadai 甘鯛(あまだい) - Branchiostegus- (known for its square head)
- Didn’t remember much about this. – so it tasted okay.
10 Sweet shrimp with tropical sauce
- The tropical sauce is just a version of mayonnaise.
- The sauce is a bit too much in portion as it starts to cover the flavor of the shrimp
11 Unagi ウナギ
- The red chili pepper flakes is again, a great spice addition.
- I’ve never had a unagi sushi adding red chili pepper - so this stroke me as very creative.
12 Uni 雲丹 - Sea Urchin
- from North Hokaido
- Had some special garnish, but I didn’t notice or took note.
13 Bluefin Tuna 大トロ - the fattest belly portion of a tuna (very fat version)
- The Kizami wasabi garnish balances the fattest. - is a great addition.
- When I came to this place last time, they serves the 3 tuna dishes back to back, which is overwhelming because of the fattiness.
- This change of order is a great improvement.
14 Tamago 玉子 - rolled omelette
- made with snowcrab rice - rice mixed with snow crab
- sounds creative but doesn’t strike me as memorable
15 Negi Toro Hand Roll - Chopped tuna with scallion
- Originally the server introduced this as something different, but the chef corrected that it was negi.
drink - Tokyo Manhattan ?
- Made with ume wine, didn’t strike me – too much ice
